I cannot put into words how delicious spaghetti squash is, baked in the oven. So much so, that after just the first time having it, I regretted the years I missed out. Why do they call it spaghetti squash ? I kid you not, once baked and you take a fork to eat, it comes apart and looks just like spaghetti and what’s more, you can make a beautiful pasta dish just the same as you would with pasta. It is also a lovely meal, side meal on it’s own….this is one veggie I beg you to not knock until you try it !
** Preheat the oven to 350F
** I cut in 1/2 of course
** Clean out seeds with a spoon
** Place on cookie sheet
** Rub a little olive oil inside, rub all over with hands to cover all spots
** I put about 5 Garlic cloves in a mini chopper and than with my hands rub all over
** Add very small about of sea salt, pepper & onion powder, add any spices to taste
** Place in the over for 45 – 60 minutes
** VOILA !!
